Wine vinegar: ancient flavors of centuries past.

Originating more than 5,000 years ago between Mesopotamia and Egypt, wine vinegar has been used for food preservation and as a natural remedy. The Greeks discovered the healing properties of wine vinegar, and the Romans used it as a culinary staple, inventing the famous drink posca. In the Middle Ages, it became an essential ingredient in marinades and sauces, and in modern times its production methods were refined through artisanal and industrial techniques. It is more than just a seasoning! Wine vinegar is a reliable culinary ally. Not only does it add character to salads, sauces, and all manner of dishes, but it also acts as a powerful natural preservative, naturally reducing microbial populations through the action of acetic acid and keeping food fresh.
They are light, healthy, and low in calories, yet rich in minerals and antioxidants. From the delicate flavor of white wine vinegar to the powerful taste of red wine vinegar, each type has its own unique aroma, illustrating the many facets of the Italian tradition.

The main differences between red and white wine vinegars are flavor, intensity, and color. They determine how they are used in cooking. Red wine vinegar is thicker and richer and is best used with red meats, flavorful dishes, and long cooking times. White wine vinegar, on the other hand, is more delicate and acidic, perfect for fish, vegetables, and light sauces.

Wine vinegar is a great ingredient for making mayonnaise and is a great way to finish off a salsa verde or tzatziki sauce recipe. It is also perfect for flavoring rich, authentic barbecue sauces.
In addition, it can be used to bring out the aroma while cooking roasted meats or risotto, or as a deglaze in place of wine. However, due to its high acidity, a small amount of sugar may need to be added to balance the flavor.
Wine vinegar is also helpful when meringueing egg whites. The trick is to add a few drops of wine vinegar before you start whisking in order to get a firm square!
In Japanese cooking, wine vinegar can be used instead of rice vinegar. In such cases, the quantity should be reduced and a small amount of sugar added to soften the acidity. It is ideal for sushi, marinades, salads, etc., maintaining a delicate and harmonious flavor.

Vinaigrette
Vinaigrette is an emulsion of extra virgin olive oil and white wine vinegar.
To make the vinaigrette, first combine the salt and white wine vinegar in a bowl. With a whisk, stir until the salt is completely dissolved. While continuing to stir, slowly add the oil and allow it to emulsify. If you want a smooth, even consistency, you can use a blender.
If you want to adjust the acidity of the vinaigrette, you can increase or decrease the amount of vinegar, or use red wine vinegar or balsamic vinegar instead of white wine vinegar.
Once the flavor balance of the vinaigrette is established, you can add flavor with herbs such as rosemary, basil, mint, thyme, or marjoram.
You can also add a teaspoon of mustard to taste.
Vinaigrette can be stored in the refrigerator for about 2 days.
◎Salsa Verde
This traditional sauce is perfect for meat dishes.
Prepare 150 g Italian parsley, 2 anchovy fillets, 30 ml white wine vinegar, 100 ml extra virgin olive oil, 1 boiled egg yolk, 60 g bread crumbs, garlic, 1 tsp capers washed and desalted. Use a hand blender.
Soak the bread crumbs in the white wine vinegar, place all ingredients in a container and stir, adding oil little by little, until you have a smooth sauce. Place the resulting sauce in a glass jar, cover with oil, store in the refrigerator, and serve with your favorite dish when ready to eat.
